Friday morning - I've weighed in. I've gained four pounds.
Later in the morning I gathered together the ingredients for a crustless quiche. I mixed together 8 eggs, 1/2 cup h/h, cheddar cheese, feta cheese, and lots of veggies (broccoli, asparagus, onions, and zucchini). I did not use any s/p. Mistake. Salt and pepper next time for sure.
I baked it at 400 for about 40 minutes. I'm guessing it makes about 6 servings. Not bad. It is a little bland thanks to no s/p and I was disappointed that the feta cheese did not flavor it as I had hoped but overall, it was a success. I loved the smooth and chunky texture of the resultant mix.

Was at Target with Krista. I suggested El Polla Loco for dinner. Grilled chicken would have been good. She suggested Chipotle. I have a good Plan A for Chipotle.
Romaine lettuce
a dash of lime rice
peppers and onions
a dash of whole beans
beef
drizzle of sour cream
pico de gallo
grated jack cheese
Good. Filling. Satisfied for the night.

Hang in there Annie. Remember, you are doing this for yourself. Oh you aren't going to want to hear this. In three weeks, you gained 4 pounds. You were losing about 1 pound a week for a while. That's 21,000 extra calories that you ate when you fell off... Time to regroup and rethink.. maybe get that book back out and do some reading..
Hi Annie! Did YOU have a Birthday yet??!! I can't find my address book and I think that's where I jotted down your Bday date! I've been offline a lot too and I haven't gotten on my scale! I think maybe this is the wrong time of year for a diet! I'm going to scoot in this booth though and see if I can get back on track a little at least!!I'm still not liking what I see in my mirror!!!I've got to get back to some JJ's and exercise!+of course watch what I eat which I should write it down! UG!
